BOLD BBQ MEATLOAF

4 slices whole wheat bread, crusts removed
1 small clove garlic, peeled
1/2 cup coarsely chopped yellow onion (Reserve two 1/4-inch slices, separated into rings)
1/2 cup coarsely chopped green bell pepper
5 sun-dried tomatoes, cut into small pieces with scissors
1 pound ground beef
1 1/4 pounds ground turkey
2 eggs, beaten
1 cup KEN DAVIS BAR-B-Q-SAUCE

Heat oven to 375 degrees. Place bread in bowl of food processor and process to small crumbs (about 15 seconds). Transfer crumbs to a large bowl. Place garlic, onion and bell pepper in bowl of food processor and process into small pieces. It may be necessary to stop the food processor, scrape down the side of the bowl, and restart the processor. Place garlic mixture in bowl with breadcrumbs. Add remaining ingredients, and mix thoroughly.

If you plan to use a baking dish without a drip tray, line your pan with foil and carefully remove pooled liquids about 20 minutes into baking time. Form a large loaf, about 2 inches high, on an ungreased deep baking dish, roasting pan or broiler pan with a drip tray. Spread an additional 3 to 4 tablespoons KEN DAVIS BAR-B-Q-SAUCE over loaf, and top with reserved onion slices. Bake until internal temperature reaches 160 degrees, about 45 minutes.}

BASIC BAR-B-Q-MEATLOAF

1 egg
1 cup dry bread crumbs
1/4 cup minced onion
1 1/2 pounds ground beef
1 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups KEN DAVIS BAR-B-Q-SAUCE

Heat oven to 350 degrees. In large bowl, beat egg slightly; mix in bread crumbs, onion, ground beef, salt, pepper and 3/4 cup KEN DAVIS BAR-B-Q-SAUCE thoroughly. Spread mixture in ungreased loaf pan, 9 x 5 x 3 inches. Spread remaining barbecue sauce over the top. Bake 1 hour. Cool slightly before slicing.

Turkey Meatloaf:
Substitute ground turkey for the ground beef. Add 1/4 teaspoon dried sage leaves and 1/2 cup finely chopped celery with the bread crumbs.

Mexi-Meatloaf:
Use 1 pound ground beef and 1/2 pound ground pork. Substitute 3/4 cup salsa mixed with 1/2 cup KEN DAVIS Smooth 'n Spicy BAR-B-Q-SAUCE for the plain barbecue sauce. Stir in 1 can (4 ounces) chopped green chilies and 1 can (4 ounces) chopped ripe olives with the bread crumbs.

Mediterranean Meatloaf:
Substitute ground lamb for the ground beef and 1 cup bulgur wheat for the bread crumbs. Add 1/4 teaspoon ground nutmeg.
